Sometimes on a hot summer day (like today) a nice refreshing salad sounds like just the solution to your hunger. It also gives you a great reason to use up a ton of fresh produce you might have on hand. Whenever I feel like I want to eat something filling that just feels healthy I make this salad. Some people call it a Trashcan Salad or a Kitchen Sink Salad, because it has everything you can imagine to throw in it, but because my sister-in-law first introduced it to me, I call it the Jessie Salad.
Here’s approximately what you need for the Jessie Salad:
- Apple, diced
- Garbanzo beans, rinsed and drained
- Cucumber, diced
- Bell pepper, diced
- Beets
- Corn
- Avocado
- Craisins
- Peanuts (or walnuts)
- Feta cheese
- A few handfuls of greens, i.e. arugula
- Salt and pepper
- Olive oil (optional)
What’s wonderful about this salad is you can really throw in whatever you want. The feta cheese and avocado kind of make a dressing on their own, but if you crave more you can drizzle a little olive oil over it. Add in your greens at the very end, because you really only need a handful:

Then toss it all together and enjoy all those fresh flavors marrying together.
