For matzoh brie. My favorite Passover-season breakfast, which is simply scrambled eggs with pieces of matzoh folded in (be sure to soak the matzoh in lukewarm water first. squeeze out the water before adding it to the eggs). You can make it savory (salt and pepper, veggies) or sweet (green apples, cinnamon sugar). And this morning was a morning for a big cup of coffee and matzoh brie!

Good thing our milk is kosher for Passover…
