Meatless Mondays: Baked Eggplant
I came home to find the most beautiful baked eggplant slices come out of the oven… Slip had prepared a beautiful and delicious dinner while I was in class. How awesome is that? Some lightly breaded baked eggplant, topping brown rice and sauteed veggies. Topped with sriacha hot sauce and tahini. So tasty and colorful!
Early Birthday Dinner
Slip is joining me in the 27 club on Wednesday, and tonight we had an early birthday dinner for him at his parent’s house. His mom, a wonderful Italian cook, prepared the most delicious yet simple dinner for us (my goal in life is to cook that way). We feasted on a fresh arugula salad with grapes and walnuts, rosemary focaccia bread with an olive oil dip with top shelf olive oil from our...
Dim Sum Sunday
Today seemed like the perfect day for dim sum. Sara and I made plans to get together, and I found out today she’d never had dim sum before. I’ve never gone before in Philadelphia, but finding ourselves in close proximity to Chinatown we headed to what was highly recommended to me, Joy Tsin Lau. With not too long of a wait, we sat excitedly at our table sipping on tea, eyeing up the...
A few weeks ago after a trip to the movies (see The Artist, it was wonderful!) we stopped by Pizzeria Stella for a quick dinner. I’ve heard Stella can get pretty busy, but stopping in kind of late worked perfectly, as it was relatively empty. We first got seated in the bar area, which is pretty dark and kind of musty, but the hostess moved us into the main section with a smile. Sitting in...
Meatless Monday: Brown Rice Casserole
Brown rice is a staple in my household— we have a rice maker and many weeks will just make a pot of rice at the beginning of the week and use it throughout. I love our rice maker because it is so easy to use— just throw in some rice, water, and seasonings (i.e. salt, pepper, cumin, garlic powder, sauteed onions, etc.) and plug it in. Then I can go about getting some other things done...
topic101: One of the health trends we’re watching in 2012 is the rise in the Flexitarianism—an approach to eating that reduces intake of meat and poultry without going Vegetarian. Interested? Start with Meatless Mondays.
Chewy Ginger Cookies
I made these cookies 3 or 4 times in the span of a few weeks— going through an entire jar of molasses— so I had to share them. I am actually not a ginger cookie person, and honestly made them at first because they seemed like the easiest, quickest cookie recipe in the December issue of Bon Appetit. But then… they turned out to be awesome. With three types of ginger (fresh,...
Meatless Monday: Butternut Squash Lasagna
This meal might be a little labor intensive, but it is filling, hearty, comforting, and satisfying. Also, the recipe is adapted from Cooking Light, making it a healthier version of your typical lasagna. If you give it a try, I’m sure you won’t regret it! Butternut Squash Lasagna Cooking Spray 3 Cups Chopped Onion 10 Cups Chopped Collard Greens (or fresh Spinach or Kale) 1/2-1...
Drinking lots of water...
Because in just a few hours I’ll be at altitude in Avon, CO enjoying a few days of mountains, sunshine, and skiing. Oh, and there’s some pretty good food out there, too. So excited…
I’m watching Top Chef right now and my mouth is watering as the cheftestants are cooking their own BBQ at The Salt Lick outside of Austin. I’m thinking of my own trip there last March. And seeing all this meat, I’m dreaming of the prime rib we had on Christmas day! Slip’s cousin Michael used his Big Green Egg to smoke this huge piece of meat in Jack Daniel’s wood...
