Meatless Mondays: Baked Eggplant
I came home to find the most beautiful baked eggplant slices come out of the oven… Slip had prepared a beautiful and delicious dinner while I was in class. How awesome is that? Some lightly breaded baked eggplant, topping brown rice and sauteed veggies. Topped with sriacha hot sauce and tahini.  So tasty and colorful!

Meatless Monday: Brown Rice Casserole
Brown rice is a staple in my household— we have a rice maker and many weeks will just make a pot of rice at the beginning of the week and use it throughout. I love our rice maker because it is so easy to use— just throw in some rice, water, and seasonings (i.e. salt, pepper, cumin, garlic powder, sauteed onions, etc.) and plug it in.
